Pumpkin is a commonly grown vegetable that is well known for its numerous health benefits. This store-house of antioxidants is loaded with Vitamins A, C and E. Low on calories with abundant vitamins, minerals and fiber, undoubtedly makes pumpkin a regular choice in weight loss and cholesterol lowering programs.
Pumpkin has its place in pies and tarts during celebrations. However, make an easy soup and reap its benefits more often, even daily. It makes a creamy soup, without adding any cream. In addition, it's quite a fulfilling meal.

Cooking time: 20 min
INGREDIENTS 1 big bowl pumpkin cubes
1/2 onion, chopped
4-5 garlic pods, chopped
1 tsp oil
2-3 cups vegetable/chicken stock OR water
Salt to taste
Heat oil in a pan. Add onion and garlic. Saute till fragrant.
Add pumpkin cubes.
Add the stock or water. Using vegetable or chicken stock gives it added flavor. Like wise you can use the stock cubes readily available in market.
Cover and cook till the pumpkin can be easily mashed as shown.
Let it cool. Transfer to a blender to make a smooth puree.
Add the puree back to the stock, mix well and cook on low heat for few minutes. Do not boil.
Add salt and pepper.
You may garnish with low fat cream or grated cheese or have it as is.
