Creamy Leek and Potato Soup

This is a quick and easy soup which can be had at any time of the year. Potato is perennially available. So whenever you get leek, this is a healthy and wonderful combination.
Thick creamy soup

Potato has been made infamous as a fattening food. However, it is packed with carbs and de-stressing nutrients. If not fried, potato is harmless. Leek belongs to the onion and garlic family and adds a mild flavor to the dish. It is high in fiber and very low in calories. So it can make you feel full without the calories. Both these ingredients together give a thick and creamy texture to the soup.

Serves: 2
Preparation Time: 5 min
Cooking Time: 10-15min

1 large potato, washed and cubed
1 leek
1-2 cloves garlic
1 tsp oil
2-3 cups broth or water
Salt and Pepper, to taste

Cut the green part and the root part of the leek. Only the middle white stalk is edible. Cut rings and wash well.

Take oil in a pan. Add chopped garlic, leek rings and potato cubes. Saute well

Add broth (you can use vegetable or chicken broth) or water. Alternatively, dilute a stock cube in a 2tbsp hot water and add.

Add salt. Cover and let the potatoes cook.

Allow the mixture to cool. Then transfer to a blender and make a smooth puree

Transfer back to the pan. Check salt. Season with pepper.

Enjoy hot soup.
